Morisseau Mussels with Soba noodles

Ingredients
  • 4 kg Morisseau mussels
  • 2.8 g Garlic
  • 30 g Ginger
  • 100 ml Soy sauce
  • 60 ml Rice wine vinegar
  • 40 ml Sesame oil
  • 30 g Honey
  • 2 Bird's eye chillies
  • 5 Scallions
  • For Memory Salt/pepper
  • 2 Lime juice
  • 400 g Soba noodles
  • 1 Greens of the scallions
  • 1/5 bunch Coriander
Ready? Here we go!
Étape 1

Soba noodles
Cook the soba noodles in boiling water for 6 minutes.
Rinse in cold water.

Morisseau mussels
Clean and scrub the Morisseau mussels.
Heat them in a pot to open them up — be careful not to overcook them.

Étape 2

Method

Finely slice the chillies and scallions.
Finely chop the garlic and ginger.
In a wok, heat the sesame oil and fry the chilli, garlic and ginger until fragrant, taking care not to burn them.
Add in the Morisseau mussels, followed by the soy sauce, vinegar, honey and lime juice.
Stir well so that the Morisseau mussels are coated in the sauce and cover the wok to cook for 3 to 5 minutes until the mussels are cooked.

Add in the scallions and soba noodles, leave to cook for another 2 to 3 minutes, so that the soba noodles are thoroughly heated.

Finishing

Dress the dish on a plate and garnish with the greens of the scallions and the chopped coriander.

Soba noodles are Japanese noodles made with buckwheat.
They fall under the ramen and udon noodle category, which are most commonly eaten in Japan.

What floats your boat?
Working with noble and high-quality seafood, in rhythms dictated by Mother Nature, where no two days are the same… That's what really floats my boat!
My favorite memory? My first overnight fishing trip. I was so excited to fish for mussels in La Plaine-sur-Mer for the first time and to see the fruits of our labor. The only problem? I couldn't see a thing. I stopped, the boat was going off-course… I got lost! I called my colleague, who was a seasoned seafarer with 25 years of experience of these waters, and he guided me to the mussel beds. It was a success, but it had its challenges. We headed back to the port with a well-laden boat, and I was finally able to breathe after that somewhat perilous first fishing trip!
